SAMPLE OF RECIPES FOR DINNER-FOR-TWO MENUS
 Chicken Florentine w/ Mornay Sauce 2 chicken breasts (tenderized) 2 cups spinach leaves (chopped) 4 slices bacon (finely chopped) 1-2 cloves garlic (minced) 2-3 cloves shallots (chopped) 1/2 red bell pepper (chopped) 4 puff pastry sheets (4" by 4") Saute bacon until golden brown. Add garlic, shallots, red pepper & spinach. Saute mixture until spinach leaves become tender. Season to taste. Drain mixture well. Divide mixture between the chicken breasts & roll it up inside the breasts. Place the stuffed breast in the center of the puff pastry. Brush the edges lightly with water, then top with the other puff pastry sheet. Pinch the edges together. Bake at 350 degrees until golden brown. Internal temperature must reach 160. |
| Mornay Sauce 2 cups water 4 chicken bouillon cubes 1 cup roux (equal parts melted butter & flour) 1/4 cup whipping creme 1/4 cup shredded Swiss cheese 1 tbsp. Sherry Combine water & bouillon cubes & bring to a boil. Thicken with a roux until the sauce clings slightly to the back of a spoon. Add cheese, whipping creme, & Sherry. Simmer for 2 minutes. Serve over chicken florentine. |
Fresh Vegetable Boquetiere 1 large carrot (julienne) 4 asparagus spears 2 baby corn cobs 2 small broccoli florettes 2 medium tomatoes 2 pads butter Remove the core from the tomatoes & hollow out the center. In a small pan saute broccoli, corn cobettes, asparagus & carrots. Neatly arrange the vegetables inside the hollowed out tomatoes & steam fo 1-2 minutes. Add butter just before serving. |
